“Black Forest” Mousse

We’ve enjoyed chocolate mousse for many years, but I decided to change it up this time using cherry brandy…horror of horrors…the dissent was palpable. But, the result was delicious and will be enjoyed again, especially since I still have more cherry brandy…🍒 🍒

Decadent, rich, creamy chocolate mousse with a dollop of freshly whipped cream and a cup of coffee…yum

Ingredients:

12 eggs (room temperature)

10 oz. Belgian Semi Sweet chocolate– chunks, chips, or chopped, your choice

1/2 pound butter (2 sticks)

3/8 cup cherry brandy

Directions :

▪︎Separate eggs, Whites in a large mixing bowl, yolks in a small bowl.

▪︎ In a double boiler, over hot not boiling water, melt chocolate with butter, stirring constantly.

▪︎ Remove top of double boiler, while off the heat beat in yolks one at a time. Let cool 10 minutes. Stir in cherry brandy.

▪︎ Beat egg whites until stiff peaks form.

▪︎ Fold chocolate mixture into egg whites just enough to combine thoroughly, without deflating the whites. Refrigerate.

▪︎ Serve with fresh whipped cream: 3/4 cup heavy whipping cream, 1 t. Vanilla, 1 T. Powdered sugar…whipped to your favorite consistency.

▪︎ Garnish with shaved chocolate if desired, and an amarena cherry would have been a nice touch…we forgot!
